
This banana bread Is honestly so addictive it will make you want to eat the whole loaf in one go!
Wet Ingredients
- 3 medium, very ripe bananas
- 1/4 cup melted coconut oil
- 1/4 cup pure maple syrup
- 1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons water and left for 15mins)
- 1 tsp pure vanilla extract
Dry Ingredients
- 1 1/2 cups oat flour
- 3/4 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon (optional)
- 1/4 tsp salt
- 3/4 cup chocolate chips
Instructions:
- Preheat your oven to 350°F / 180°C and line a loaf pan with parchment paper
- Mash the bananas until they’re smooth, then add in coconut oil, maple syrup, flax egg and vanilla and whisk until combined
- Pour in the oat flour, almond meal, baking powder, baking soda, salt and cinnamon if using. Whisk until just combined making sure there are no flour patches
- Fold in the chocolate chips with wooden spoon
- Pour the mixture into your prepared loaf pan making sure you even the top out, pour some extra chocolate chips on the top if you wish
- Bake for 60-70 mins and then allow to cool a little before slicing
