THE Best Banana Bread (V, GF)

This banana bread Is honestly so addictive it will make you want to eat the whole loaf in one go!

Wet Ingredients

  • 3 medium, very ripe bananas
  • 1/4 cup melted coconut oil
  • 1/4 cup pure maple syrup
  • 1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons water and left for 15mins)
  • 1 tsp pure vanilla extract

Dry Ingredients

  • 1 1/2 cups oat flour
  • 3/4 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon (optional)
  • 1/4 tsp salt
  • 3/4 cup chocolate chips

Instructions:

  • Preheat your oven to 350°F / 180°C and line a loaf pan with parchment paper
  • Mash the bananas until they’re smooth, then add in coconut oil, maple syrup, flax egg and vanilla and whisk until combined
  • Pour in the oat flour, almond meal, baking powder, baking soda, salt and cinnamon if using. Whisk until just combined making sure there are no flour patches
  • Fold in the chocolate chips with wooden spoon
  • Pour the mixture into your prepared loaf pan making sure you even the top out, pour some extra chocolate chips on the top if you wish
  • Bake for 60-70 mins and then allow to cool a little before slicing
