
These cookies are soft chewy and so delicious, the perfect chocolate chip cookie you won’t even know they are healthy!
Ingredients
- 1 egg slightly beaten
- 1 tsp pure vanilla extract
- 1/4 cup coconut oil, melted and cooled
- 1/2 cup coconut sugar
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda/ bicarb of soda
- Dark chocolate chips for topping
Instructions
- Preheat your oven to 350Β°F / 180Β°C and line a baking tray with parchment paper
- In a large bowl add the beaten egg, coconut oil, coconut sugar and vanilla extract
- Add in the almond flour, coconut flour and baking soda and mix until you form a dough
- Use a ice cream scoop or spoon and drop dough onto baking tray, top with chocolate chips and gently press down to flatten slightly
- Bake for 11-13 minutes or until the edges are slightly brown
