
These cookies are for the Peanut butter and jelly fans, they’re dense soft and yummy!
Ingredients:
- 1/2 cup peanut butter
- 2/3 cup blanched almond flour
- 1 tsp vanilla
- 1/2 tsp salt (I use pink Himalayan)
- 1/2 tsp baking powder
- 1/4 cup maple syrup
- Strawberry jam
Instructions:
- Preheat your oven to 350°F / 180°C and prepare a baking tray with parchment paper
- Mix all the ingredients except the jam and roll into equal balls
- Flatten with a folk and bake for 12-15 minutes
- Allow cookies to cool and then spread jam between two cookies and sandwich together
