Paleo Cinnamon Roll Cookies (V)

I was looking for a paleo cinnamon roll recipe for YEARS and then I found this one and MY god, it is.. perfect! I got so sick of finding recipes and then seeing “use gluten free flour” , these cinnamon rolls will even convert non-cinnamon lovers I promise you!

Ingredients:

Cookies:

  • 2 1/4 cups almond flour
  • 1/3 cup pure maple syrup
  • 1/4 cup coconut oil melted
  • 1 tsp pure vanilla extract
  • 1/2 tsp baking soda/ bicarb of soda
  • pinch of salt

Filling:

  • 1/2 cup coconut sugar
  • 1.5 tbsp roughly of cinnamon
  • pure maple syrup – enough to make mixture moist

Icing:

  • Coconut cream – top half of full fat can
  • pure maple syrup

Instructions:

  • Preheat the oven to 350°F / 180°C and prepare baking tray with parchment paper
  • Mix the cookie ingredients together and then roll the dough into long strips
  • Paste the filling along the strips
  • Roll up into cinnamon roll shape and push down gently
  • Bake for 10 minutes until firm on the outside
  • Allow to cool before icing
