
I was looking for a paleo cinnamon roll recipe for YEARS and then I found this one and MY god, it is.. perfect! I got so sick of finding recipes and then seeing “use gluten free flour” , these cinnamon rolls will even convert non-cinnamon lovers I promise you!
Ingredients:
Cookies:
- 2 1/4 cups almond flour
- 1/3 cup pure maple syrup
- 1/4 cup coconut oil melted
- 1 tsp pure vanilla extract
- 1/2 tsp baking soda/ bicarb of soda
- pinch of salt
Filling:
- 1/2 cup coconut sugar
- 1.5 tbsp roughly of cinnamon
- pure maple syrup – enough to make mixture moist
Icing:
- Coconut cream – top half of full fat can
- pure maple syrup
Instructions:
- Preheat the oven to 350°F / 180°C and prepare baking tray with parchment paper
- Mix the cookie ingredients together and then roll the dough into long strips
- Paste the filling along the strips
- Roll up into cinnamon roll shape and push down gently
- Bake for 10 minutes until firm on the outside
- Allow to cool before icing
