Lemon Soft Baked Donuts GF/V

These lemon donuts are, I think my favorite treat of all time, they’re unbelievably soft and melt in your mouth with every bite. If you’re a lemon lover this one is for you…

You will need two 6-donut pans, preferably like these ones here. (UK peeps here. ) and preheat your oven to 350°F / 180°C

If you don’t already have them, you will need American cup measurements for nearly all of my recipes! Like these (UK these )

Dry Ingredients:

  • 2 1/4 Cups oat flour – I use this (UK this one)
  • 1/2 cup finely ground, blanched almond flour
  • 1 tsp baking soda /bicarb of soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt (I use pink Himalayan)

Wet ingredients

  • 1/2 cup + 2 tablespoons water
  • 1/2 cup non-dairy milk (I use almond)
  • 2-4 tbsp lemon juice, fresh from squeezed lemon
  • 2 tbsp zest of lemon (should be about 1 lemon)
  • 3 tbsp melted coconut oil (I use odourless)
  • 1/4 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 1/2 tsp pure vanilla extract

Lemon glaze

  • 1/4 cup roughly organic confectioners sugar
  • 1 1/2 tsp fresh lemon juice
  • lemon zest for garnishing

or

  • coconut milk (thick part from top of full fat coconut milk can)
  • maple syrup
  • organic lemon essence
  • lemon zest for garnishing

Instructions:

  • Make sure your oven is preheated to 350°F / 180°C and lightly grease your donut pans with coconut oil
  • In a large bowl sift together all the dry ingredients and set aside
  • Add the water and milk to the microwave in a microwave safe bowl, heat in 10 second increments until its just warm (this stops the melted coconut oil from solidifying)
  • In another bowl, whisk together all wet ingredients, water milk, lemon juice, lemon zest, oil, sugar, maple syrup and vanilla
  • Add the wet ingredients to the dry and whisk until just incorporated making sure no flour patches remain
  • Pour or spoon the batter evenly into your prepared donut pans, tap the pans a few times to make sure the batter is even and to release bubbles that have formed
  • Bake for 10-14 minutes, a toothpick should come out clean when done
  • Allow the donuts to cool before icing
