CHOCOLATE BANANA BROWNIE

The most delicious guilt free brownies!

Imagine the best brownie and banana bread had a baby.. this is it! The fudgiest most delicious brownie, perfect for a healthy pudding, we love to serve ours fresh out the oven with coconut ice cream! It only takes 10 minutes to whip together, no fancy equipment needed.

You will need: 1 brownie tin/ or loaf tin / Preheat the oven to 180°C or 350°F

Ingredients:

  • 2 flax egg (2 tbsp flax seed meal mixed with 5 tbsp water then leave to set for 15 mins)
  • 2 ripe bananas mashed
  • 1/3 cup pure maple syrup
  • 1 tsp organic pure vanilla extract
  • 1 cup almond flour
  • 1/3 cup 100% cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda (bicarb of soda)
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips or chunks
  • Optional pecans for topping

Instructions:

  • Preheat your oven and line a square brownie tin or loaf tin with parchment paper
  • Make sure you’ve mixed your flax eggs and leave to set
  • In one bowl mix the almond flour, cocoa powder, baking powder, soda and salt
  • In another bowl whisk the mashed banana with the flax egg, maple syrup and vanilla
  • Combine the flour mix etc and stir until smooth
  • Fold in the dark chocolate chips with a spoon
  • Pour the batter into your prepared baking tray, top with pecans or leave as it is
  • Bake for 50-70 mins (my oven usually takes 70mins so don’t worry if its taking longer than expected! Bake until toothpick comes out mostly clean
  • Allow to cool for around 10mins before serving!
