
The most delicious guilt free brownies!
Imagine the best brownie and banana bread had a baby.. this is it! The fudgiest most delicious brownie, perfect for a healthy pudding, we love to serve ours fresh out the oven with coconut ice cream! It only takes 10 minutes to whip together, no fancy equipment needed.
You will need: 1 brownie tin/ or loaf tin / Preheat the oven to 180°C or 350°F
Ingredients:
- 2 flax egg (2 tbsp flax seed meal mixed with 5 tbsp water then leave to set for 15 mins)
- 2 ripe bananas mashed
- 1/3 cup pure maple syrup
- 1 tsp organic pure vanilla extract
- 1 cup almond flour
- 1/3 cup 100% cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda (bicarb of soda)
- 1/4 tsp salt
- 1/3 cup dark chocolate chips or chunks
- Optional pecans for topping
Instructions:
- Preheat your oven and line a square brownie tin or loaf tin with parchment paper
- Make sure you’ve mixed your flax eggs and leave to set
- In one bowl mix the almond flour, cocoa powder, baking powder, soda and salt
- In another bowl whisk the mashed banana with the flax egg, maple syrup and vanilla
- Combine the flour mix etc and stir until smooth
- Fold in the dark chocolate chips with a spoon
- Pour the batter into your prepared baking tray, top with pecans or leave as it is
- Bake for 50-70 mins (my oven usually takes 70mins so don’t worry if its taking longer than expected! Bake until toothpick comes out mostly clean
- Allow to cool for around 10mins before serving!
