I have always loved baking even from a young age, I would always raid the cupboards to find whatever I could that I could bake with. Now I’m a little bit more experienced, after A LOT of baking fails, and after reading a copious amount of baking ‘bibles’, I have finally mastered a few of my favourite recipes and I will share them on my blog for you to try! Trust me you don’t need to be Mary Berry to have a go at them!
My favourite all-round easy snack bar to bake is my Gluten Free traybake. I honestly make these once or twice a week, they’re so simple to make, they are only made up of 5 ingredients and they will fill you up, give you energy AND are packed full of vitamins and minerals like calcium and vitamin E. We take them every weekend to Max’s races as a healthy energy bar! Always a winner, excuse the pun.
First of all lets talk equipment… I recently bought a new food processor and a cake mixer, and yes I wanted the super flash Kitchenaid one with matching everything, but in reality you don’t have to buy the most expensive one, I ended up getting both in the sale for £100 and they work perfectly! For this recipe and most of my recipes the easiest method is using a food mixer and food processor of some kind, trust me it will save you so much time and energy! Click here and here to see what I use… If you don’t walk to folk out just yet use an electric hand whisk and blender like a nutri-bullet instead.
So back to the baking…
Ingredients:
1 Cup Coconut flakes
1/2 Cup Almond butter or any nut butter
2 Cups chopped Almonds OR mixed nuts (put them in the food processor with a tbsp of water and blend until they’re more like breadcrumbs)
1/2 Cup Honey (or Agave syrup for Vegan)
1/2 Cup Dark chocolate chunks (or any kind of chocolate!)
Method:
- Preheat oven to 180° and grease your baking tray with coconut oil or parchment paper, don’t forget or it will stick!
- Add all the ingredients into the mixer and mix until it becomes slightly sticky and holds together

- Spoon into your baking tray and using another piece of parchment paper push the mixture into each corner and level it out so its smooth

- Bake for 12-15 minutes, I usually bake for 15 because I like the edges a little bit chewy and hard!

- Leave to cool completely before you slice into it, this is important because it will fall apart otherwise! I usually put mine in the fridge when it is almost cool and it’s definitely the easiest way to cut them into squares. Trust me its worth the wait!
